One-Pot Spicy Garlic Butter Chicken Tortellini

A comforting weeknight supper featuring tender tortellini, diced chicken, and a spicy garlic butter sauce.

  • 2 cups cooked tortellini
  • 1 lb chicken breast, diced
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Melt the butter over medium heat in a large pot. Let it foam slightly but do not brown.
  2. Add the minced garlic and crushed red pepper flakes, sautéing until fragrant, about 1 minute.
  3. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes, stirring occasionally.
  4. Stir in the cooked tortellini and Parmesan cheese, mixing until well combined and heated through. If the mixture seems dry, add a splash of reserved pasta water.
  5. Serve warm, garnished with fresh parsley if desired.

Notes

Use already cooked tortellini to keep this truly one-pot and fast. Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
