Orange Creamsicle Cake

A light and fluffy cake infused with bright citrus notes, topped with a creamy frosting that has a refreshing orange twist.

  • 1 box vanilla cake mix
  • 1 box (3 oz) orange gelatin mix
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 2 tbsp orange extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, combine the vanilla cake mix and orange gelatin mix and stir until well mixed.
  3. Add the orange juice, vegetable oil, eggs, vanilla extract, and orange zest. Beat until smooth.
  4. Divide the batter evenly between the prepared cake pans.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  7. For the frosting, beat the softened butter until fluffy. Gradually mix in the powdered sugar until well combined.
  8. Add the heavy cream and optional orange extract; beat until smooth and creamy.
  9. Frost the top of the first cake layer, then stack the second layer on top and frost the entire cake.
  10. Slice and serve, enjoying the delightful flavors.

Notes

For added flavor, consider mixing a few extra tablespoons of orange zest into the frosting. Store leftover cake in an airtight container in the refrigerator for up to 4 days. You can freeze the cake for up to 3 months.
