Pecan Cookies

Warm, buttery, and gently nutty, these Pecan Cookies are a simple treat that feels both timeless and special.

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar, sifted
  • 2 cups all-purpose flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ¾ cup pecans, finely chopped
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and position a rack in the center of the oven. Line a baking sheet with parchment paper.
  2. Cream together the softened butter and powdered sugar until fluffy.
  3. Add the all-purpose flour, kosher salt, and vanilla extract to the butter mixture and mix until a soft dough forms.
  4. Stir in the finely chopped pecans until evenly distributed.
  5. Using a 2-tablespoon cookie scoop, place rounded portions of dough on the lined baking sheet.
  6. Flatten each cookie using the bottom of a glass dipped in granulated sugar.
  7. Bake for 11 to 13 minutes until the edges are lightly browned and the centers look set.
  8. Allow cookies to cool completely before serving.

Notes

Chill the dough for 10 minutes if your kitchen is warm for easier handling.
