  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup milk (or non-dairy alternative)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 cups crispy rice cereal
  • 1 1/2 cups chopped pecans
  • 2 cups powdered sugar
  • 34 tablespoons milk (or non-dairy alternative)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a large baking sheet with parchment paper to prevent sticking.
  2. In a large heatproof bowl, combine the rolled oats, crispy rice cereal, and chopped pecans. Mix well to evenly distribute the ingredients.
  3. In a medium saucepan, combine the butter, granulated sugar, light brown sugar, and 1/4 cup of milk. Bring this mixture to a rolling boil over medium heat while stirring constantly. Allow it to boil for exactly 1 minute.
  4. Remove the saucepan from heat and immediately stir in 1 teaspoon of vanilla extract.
  5. Pour the hot mixture over the prepared dry ingredients and stir quickly to ensure everything is well-coated and combined.
  6. Using rounded spoonfuls, drop the mixture onto the lined baking sheet and shape each into mounds.
  7. Place the baking sheet in the refrigerator and chill for at least 30 minutes until firm.
  8. For the glaze, whisk together the powdered sugar, 3 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk if needed for desired consistency.
  9. Drizzle the glaze over the chilled bites and let it set before serving.

Notes

Make sure to stir the mixture quickly after pouring it over the dry ingredients to avoid hardening. Store in an airtight container at room temperature for up to five days.
