Pecan Pie Bites

Delicious bite-sized treats that combine rich pecan flavors with a sweet, gooey filling, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin to prevent sticking.
  2. In a mixing bowl, combine flour and powdered sugar. Cut in softened butter until the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of each muffin cup to form a crust.
  4. In another bowl, mix together chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt until well combined.
  5. Pour the pecan filling into each crust, filling them just to the top.
  6. Bake for 15 to 20 minutes, until the filling is set and golden brown.
  7. Allow to cool slightly before removing from the tin and enjoy.

Notes

For optimal texture, ensure butter is softened but not melted. Store leftover bites in an airtight container for up to 3 days at room temperature or for about a week in the refrigerator.
