Pumpkin Cheesecake with Gingersnap Crust

  • 1 and 1/2 cups gingersnap cookie crumbs
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 32 ounces full-fat brick cream cheese, softened
  • 1 and 1/2 cups granulated sugar
  • 1/3 cup full-fat sour cream
  • 1 teaspoon pure vanilla extract
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 and 1/2 teaspoons ground cinnamon
  • 1 and 1/2 teaspoons pumpkin pie spice
  • Salted caramel and whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (177°C) and grease the sides of a springform pan.
  2. Combine the gingersnap cookie crumbs, ground ginger, ground cinnamon, granulated sugar, and melted butter in a medium bowl.
  3. Press the crumb mixture into the bottom and up the sides of the springform pan. Pre-bake for 10 minutes, then let cool slightly.
  4. Beat the softened cream cheese with the granulated sugar until smooth, then add the sour cream and vanilla extract.
  5. Add the eggs one at a time, mixing just until incorporated.
  6. Scoop out 2 cups of the batter, then add pumpkin puree, ground cinnamon, and pumpkin pie spice.
  7. Layer the batter over the crust by alternating spoonfuls of plain cheesecake batter and pumpkin batter.
  8. Prepare a water bath by placing the springform pan in a larger baking dish and adding hot water until halfway up the sides.
  9. Bake for 55 to 70 minutes until the center is set but slightly wobbly.
  10. Turn off the oven and let the cheesecake cool inside for 1 hour.
  11. Cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.
  12. Serve topped with salted caramel and whipped cream if desired.

Notes

Bring cream cheese to room temperature for a smoother batter. Avoid over-mixing to prevent cracking.
