Salted Pistachio Dark Chocolate Chip Cookies

  • 1/2 cup unsalted butter (melted and browned)
  • 2/3 cup light brown sugar
  • 2 tbsp white sugar
  • 1 large egg (room temperature)
  • 1 tbsp vanilla
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt (if using unsalted pistachios)
  • 1/2 cup roasted and salted pistachios (finely chopped)
  • Flaky sea salt (for sprinkling)
  • 1 dark chocolate bar (chopped, approx 3/4 cup)

Instructions

  1. Melt the unsalted butter in a saucepan over medium heat, stirring until deep golden brown. Remove from heat and let cool slightly.
  2. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  3. Whisk together the cooled, browned butter, light brown sugar, white sugar, egg, and vanilla in a mixing bowl until smooth and creamy.
  4. Sift together the all-purpose flour, baking soda, and salt (if using) in another bowl.
  5. Fold the dry ingredients into the wet mixture gradually until just combined, avoiding over-mixing.
  6. Gently fold in the chopped dark chocolate and pistachios.
  7. Drop rounded portions of dough onto the prepared baking tray, spaced appropriately.
  8. Bake for about 10-12 minutes or until the edges are golden brown.
  9. Remove from the oven and sprinkle flaky sea salt over the warm cookies. Allow them to cool on the baking tray for a few minutes before transferring to a wire rack.

Notes

For best results, monitor the browning butter carefully to prevent burning. Store cookies in an airtight container at room temperature for up to 1 week.
