Salted Pistachio Dark Chocolate Chip Cookies

  • 2/3 cup light brown sugar
  • 2 tbsp white sugar
  • 1 large egg (room temperature)
  • 1 tbsp vanilla
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt (only if using unsalted pistachios)
  • 1/2 cup roasted and salted pistachios (finely chopped)
  • Flaky sea salt (for topping)
  • 1 dark chocolate bar (chopped, approx 3/4 cups)

Instructions

  1. Melt the butter in a saucepan over medium heat until it starts to foam. Cook until golden brown and fragrant. Remove from heat and let cool.
  2. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  3. Whisk together the cooled browned butter, light brown sugar, and white sugar until smooth.
  4. Add the room temperature egg and vanilla, whisking until creamy and well combined.
  5. Sift together the all-purpose flour, baking soda, and salt (if using) in a separate bowl. Gradually fold this dry mixture into the wet mixture until just combined.
  6. Fold in the chopped dark chocolate and finely chopped pistachios until evenly distributed.
  7. Scoop the dough onto the prepared baking sheet, leaving space for spreading.
  8. Bake for 10-12 minutes until the edges are golden brown. Cool slightly on the tray before transferring to a wire rack.
  9. Sprinkle flaky sea salt on top while still warm. Cool completely before enjoying.

Notes

For best results, ensure your butter is cool but still liquid when mixing. Cookies can be stored for up to one week in an airtight container or frozen for up to three months.
