Indulge in the heavenly flavors of the Samoas Cookie Pie, a delightful twist on the classic Girl Scout cookie that combines chocolate, coconut, and rich caramel in a dreamy pie form.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips (for sprinkle)
  • 1 1/2 cups sweetened shredded coconut
  • 2/3 cup sweetened condensed milk
  • 4 to 5 ounces salted caramel sauce
  • 3/4 cup semi-sweet chocolate chips (melted for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9-inch pie dish with cooking spray.
  2. In a microwave-safe bowl, melt the butter for about 1 minute on high power. Be careful not to overheat.
  3. Allow the melted butter to cool slightly, then whisk in the egg, brown sugar, and vanilla extract until the mixture is smooth.
  4. Stir in the all-purpose flour and salt until just combined. Do not overmix.
  5. Pour the batter into the prepared pie dish, smoothing the top with a spatula. Bake for 10-12 minutes, or until the edges are firm.
  6. Remove the pie from the oven and sprinkle 3/4 cup of chocolate chips over the crust. Layer the shredded coconut on top.
  7. Drizzle the sweetened condensed milk and salted caramel sauce over the coconut layer.
  8. Return the pie to the oven and bake for an additional 25 minutes, or until the edges are bubbling and golden.
  9. Once baked, allow the pie to cool in the dish on a wire rack.
  10. Melt the reserved chocolate chips in the microwave, then drizzle over the cooled pie.
  11. Let the pie cool for at least 4 hours before slicing for best results.
