Stuffed Pepper Casserole Beef

A comforting one-dish meal capturing the essence of stuffed peppers with ground beef, bell peppers, and cheese, perfect for busy nights or family dinners.

  • 450 g ground beef
  • 2 bell peppers, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 425 g canned low sodium beef broth
  • 425 g canned diced tomatoes
  • 180 g uncooked long grain white rice
  • 75 g shredded mozzarella cheese
  • 75 g shredded cheddar cheese

Instructions

  1. Brown the beef in a skillet over medium heat until mostly browned.
  2. Add chopped onions and bell peppers; cook for 5-10 minutes until softened.
  3. Incorporate garlic and cook for 1-2 minutes until fragrant.
  4. Mix in Worcestershire sauce, Italian seasoning, salt, black pepper, beef broth, diced tomatoes, and rice.
  5. Bring to a boil, then cover, reduce heat to simmer, and cook for 20 minutes.
  6. Add half of the mozzarella and cheddar cheeses, allowing them to melt.
  7. Top with remaining cheese, cover, and melt or grill until bubbly.
  8. Serve immediately for a warm meal.

Notes

For added flavor, brown ground beef with onions and garlic together. This casserole freezes well for up to 3 months.
