A delightful explosion of flavors and textures, these Taco Loaded Baked Potatoes are filled with seasoned ground beef, melted cheddar cheese, and zesty toppings for a hearty meal.

  • 454 g lean ground beef
  • 46 medium Russet potatoes
  • 28 g taco seasoning
  • 120 ml water
  • 120 g sharp cheddar cheese, shredded
  • 120 ml sour cream
  • 25 g green onions, chopped
  • 85 g fresh tomatoes, diced

Instructions

  1. Prepare the potatoes: Wash and scrub the Russet potatoes thoroughly and pierce each potato several times with a fork.
  2. Bake the potatoes: Arrange the pierced potatoes on an oven rack and bake in a preheated oven at 200°C for 45 to 50 minutes.
  3. Cook the beef: In a large skillet over medium heat, add the ground beef and cook until browned, breaking up clumps as needed.
  4. Add seasoning: Stir in the taco seasoning and water, and simmer for about 5 minutes until thickened.
  5. Assemble the potatoes: Slice each baked potato lengthwise and fluff the insides with a fork.
  6. Top the potatoes: Spoon the seasoned beef over the fluffed potatoes, then add cheese, sour cream, green onions, and tomatoes.
  7. Serve hot and enjoy!
