  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan to prevent sticking.
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are fully coated.
  3. Press the crumb mixture firmly into the bottom of the pan to form a solid crust.
  4. In a large bowl, beat the softened cream cheese and sugar together until the mixture is smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition to incorporate air for a light texture.
  6. Stir in the vanilla extract, sour cream, and flour until everything is well combined and smooth.
  7. Pour the cheesecake batter over the prepared crust and use a spatula to smooth the top.
  8. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven and crack open the door, allowing the cheesecake to cool inside for 1 hour.
  10. After cooling, chill in the refrigerator for at least 4 hours before serving to allow the flavors to deepen.

Notes

For pronounced flavor, add lemon zest or top with fresh fruit. Store covered in the refrigerator for up to 5 days or freeze for 2 months.
