The Ultimate Strawberry Cream Cheese Pound Cake

  • 1 cup cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. Cream together the softened cream cheese and butter until light and fluffy (about 3-4 minutes).
  3. Gradually add granulated sugar and mix for another 3 minutes. Add eggs one at a time, mixing well after each.
  4. In a separate bowl, whisk together flour and baking powder. Gradually add to the wet mixture, mixing on low speed until just combined.
  5. Gently fold in the chopped strawberries.
  6. Pour the batter into the prepared loaf pan and smooth the top. Tap the pan on the counter to release air bubbles.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
